A Spectacular Lunch At JAAN
JAAN is a modern french restaurant in Singapore located in Swissôtel The Stamford. We visited the restaurant on 17th January 2017 to try out their Winter Menu, and to celebrate a special occasion at the same time!

When the Michelin Guide Singapore award was announced on the 21st July 2016, JAAN was one of the few restaurants which was awarded one Michelin Star. One star meaning: "A very good restaurant in its category"
Feeling excited, we proceed to see if the restaurant lives up to its standards.

Located at the 70th level of Swissôtel The Stamford, the restaurant boasts a breathtaking view of the entire Marina Bay area.
The following selection are available for lunch:
Three-course lunch menu ($78++)
Five-course degustation lunch menu ($118++)
Five-course Jardin Gourmand lunch menu ($118++)
Five-course Krug lunch menu ($368++)
Seven-course lunch menu ($158++)
We chose the five course degustation lunch menu which is priced at $118++.
First up is the amuse-bouches, which we can get a first feel of the chef's menu.
'Fish & Chips'

Foie Gras and Truffle Macaron

Tapioca, Hummus, Linseed

Smoked Mackerel, Romanesco

We were amazed by the amuse-bouches as we were served not one, not two, but four dishes! While we were still overwhelmed by the amount, the waitress came up and served us a fifth dish.
Charlotte Potato, Truffle Bouillon

Do not underestimate by the simple appearance of this dish. The deep truffle flavor, combined with the smoothness of the Charlotte potato turns out to be an excellent combination. This is probably one of my favorite truffle dish.
As we finished our amuse-bouches, we were finally served with our very first main.
Alaskan King Crab

This dish not only includes Alaskan king crab, but also Caviar and Dashi.
Heirloom Tomato

Our second main dish is called the "Heirloom Tomato". It features several ways to cook tomatoes. You never knew that tomato can taste so good. It comes with a sorbet that is very refreshing which brings out the taste very well. What an appetizing dish!
Soft Organic Hen's Egg

The highlight of the day, one of JAAN's signature dishes. Soft organic hen's egg, served with artichoke and chorizo Iberico.
Line Caught Snapper

Fresh Snapper served with Kabocha pumpkin. Curry-like taste gives the feel of an Indian Cuisine.
Poulet Noir

Probably the best chicken I have ever had in my life. Poulet served with sauce, which meat is so soft it melts in your mouth. There are also potato fondant, and some crackers. Everything on the plate is delicious!
Pimms Pomelo

Alas, the desserts. We start off with the "Pimms Pomelo" dish which comes with cucumber sorbet and lemon lime espuna. The dish is kind of light and refreshing and it helps to cleanse the palate after the meat dishes.
Ivory Caramel

You seldom go wrong with chocolate. The "Ivory Caramel" comes with different texture of chocolate. The chef finishes the dish with hot chocolate fudge. There is also pop rocks which makes the dish fun!
Special Cake

As mentioned earlier, this lunch was to celebrate a special day. We were pleased as the waitress served a complimentary birthday cake.
Mignardises

At end of the meal, we were served with some small chocolate and pastries as a thank you gift from the restaurant.
Overall, the dining experience at JAAN was amazing as not only the service is excellent, the view outside of the restaurant is spectacular, and most importantly, the food is top-notched. While one might find the dinner course too pricey, it is possible to go for the lunch menu which is more affordable.
It is highly recommended to anyone who wants to bring their family and love ones to a pleasant and memorable dining place.
